Feed through the hopper
Cut produce drops into the tall hopper. The pusher guides it down, gently, without forcing.
Technology
A high-speed juicer spins blades at thousands of revolutions a minute. It shreds the fruit, warms it and whips air into it. The juice foams, separates in the glass and starts to brown while the customer is still walking back to the table.
The CS750 turns a screw auger at 50 rpm. It crushes the produce against a strainer and presses the juice out. Less air goes in, less heat is generated, more juice comes out of the same fruit, and the pulp leaves the machine dry.
Side by side
The right-hand column describes the centrifugal machines commonly sold for kitchens. No brand names, just the category.
| What changes | Pajca CS750 cold press | Typical centrifugal juicer |
|---|---|---|
| Speed | 50 rpm | 10,000 rpm and above |
| Heat | Minimal, the auger presses | Blades generate heat as they shred |
| Oxidation | Minimal, natural colour holds | High, juice browns quickly |
| Foam | Little, air is not whipped in | Heavy froth on top of the glass |
| Leafy greens | Yes, spinach, mint, wheatgrass | Poor, leaves wrap around the blade |
| Pulp | Dry, pressed out | Wet, juice stays in the pulp |
| Noise | Low, with low vibration | High, a motor at full speed |
How the CS750 works
Cut produce drops into the tall hopper. The pusher guides it down, gently, without forcing.
The screw auger crushes the produce against the strainer wall and squeezes the juice out of it.
Juice passes through the mesh into the juice container. Dry pulp is pushed out into its own container.
Close the cap to hold juice in the bowl and mix a blend, open it to pour a clean single fruit glass.
Between batches
The whole system comes apart by hand. On a busy counter that means you can switch from carrot to pineapple without carrying the juice of one into the other.
Unplug the machine before you take anything apart. Do not put parts back wet.
A demo takes twenty minutes. Look at the colour of the juice, then look at how dry the pulp is.
